Mini Manor Cakes

My version of Mr Kipling’s mini manor cakes.

The dried fruit was heated up with the rum and left to soak and cool over night.

Ingredients

230g SR flour (1)

110g butter (1)

110g caster sugar (2)

1tsp mixed spice (2)

230g dried fruit (3)

5 TSP milk (4)

1 egg (4)

demerara sugar to sprinkle (5)

Method

Mix 1 until sand consistency

Add 2 mix

Add 3 mix

Mix 4 and add to flour mixture

Sprinkle 5 on top

Traditional Fan oven, 160 fan 15 to 18mins.
