Coffee and Walnut Cake

2 x 6inch sandwich cake tins. I lined the bottom with parchment paper and greased the sides.

I used the Ninja 9 in 1 “Bake” function.

CAKE Ingredients

Ingredients 1

125g butter

125g sugar

2 eggs

Ingredients 2

50ml coffee mix (1 tbsp of instant coffee and 2tbsp of boiling water)

1/2 TSP of vanilla essence

Ingredients 3

140g SR flour

1/4 TSP of baking powder

45g chopped walnuts.

Butter Icing Ingredients

75g butter

150g icing sugar

2 TSP coffee essence

Walnuts for decoration

Method

Whisk ingredients 1 until fluffy. Add ingredients 2 until combined. Sieve in 3, mix lightly and add the nuts.

“Bake” function, temp160 for 30mins. I swapped the tins half way for an even bake.

Leave to cool

Beat the ingredients for the butter icing together until light and fluffy.

Decorate the cake.
