Jam and Coconut Sponge with Pink Custard

This is a nostalgia bake, I always looked forward to seconds when this was on the menu at school.

I baked using the Ninja Foodie 9 in 1 using the “Bake” Function.

I used my 5inch square tin and scaled the recipe down to:

115g SR Flour

115g Sugar

115g Butter

2 large Eggs

2TBSP Milk

1/2tsp Baking Powder

1/2 tsp Vanilla Extract

The Pink Custard

35g strawberry blancmange

3/4 pint of milk

1TBSP sugar
