Mary Berry’s Cherry Cake

6 inch spring form tin, I used the Ninja 9 in 1, bake function, 170 30 to 35 mins, bake until the skewer is clean.

I made this treat a friend as it is one their favourites.

The cherries sank a bit, so next time I will try Delia’s trick and also flour the cherries. I also used bottle lemon juice and omitted the zest and added a tsp of almond essence.

Ingredients for a 6inch cake

100g glace cherries (quartered)

113g Self Flour

88g Butter (soft)

88g Sugar

1/2 lemon zest

25g ground almond

One and half large eggs

Decoration

88g Icing sugar

1/2 lemon juice

7g flaked almonds

3 glace cherries
