These mini cherry bakewell cakes take a full size bakewell and bake it as individual mini loaf slices, with almond sponge, jam and icing. I reduce the sugar in the sponge because the jam and icing bring plenty of their own.
Cherry Bakewell Cakes
I used the recipe below to make individual slices instead of a whole cake. I reduced the sugar in the sponge as the jam and icing sugar added sweetness. The mixture was slightly too much for the tin but I used a few silicone cup cakes for remainder for the mixture.
I really enjoyed these and will definitely make again.
