These mini lemon drizzle cakes are baked in a mini loaf tin so everyone gets their own, with a crunchy sugar top. The traybake quantity makes more than the tin holds, so any extra goes into silicone cases.

I used a traditional oven, 160 Fan for 15 mins.
Lots of sugar which is why I don’t make this often but it seems ok when they are this small 
I used Mary Berry’s lemon drizzle tray bake recipe. The quantity was too much for the mini loaves so I used some silicon cup cake holders for the remainder of the mix. Recipes | Mary Berry
