Small Key Lime Pie

This key lime pie is scaled down to a 5 inch square tin, which gives four servings and no leftovers. It has a digestive base and the usual condensed milk and lime filling, just in smaller quantities.

I used:

100g digestive biscuits

50g Butter

133g Condensed milk

1 med egg (whole)

2 lime zest and juice

100ml double cream

1/2 TBSP sugar

I Ninja Smart Lid 15 in 1, the “Bake” function 140 for 10 mins for the biscuit base and then 140 for 15mins with the filling.

This is a good size for just 4 with no leftovers.
