This manor cake is a small 5 inch fruit cake with mixed spice and a demerara sugar top. It uses the rubbing in method, so there is no creaming and no mixer needed.
5 inch tin, lined, I use a reusable lining
INGREDIENTS
1) 125g SR
1) 55g butter
2) 55g sugar
3) 125g dried fruit
4) 2.5 tbsp milk
4) half an egg
5) Dem sugar to sprinkle
METHOD
Mix 1 until sand consistency
Add 2 mix
Add 3 mix
Mix 4 and add to flour mixture
Sprinkle 5 on top
I used the Ninja Foodie 9 in 1 160, 30mins on “Bake”
